Hi Dan,
That is a great question, and drums up conversations with top level boot fitters often.

My mantra with bootfitting is there is rarely a “Wrong” technique when bootfitting, as long as there is a positive outcome and the end result should be a flat ski on the snow.

Regarding knee tracking, a properly formed footbed will stabilize the ankle joint and get the knee more centered. The cuff adjustment should be aligned to the tibia – now you can concentrate on the knee. The easy answer is, if your knees are in, place the cant on the inside. If knees are out, place cant on the outside. However, anatomy and joint spacing, flexibility etc. will vary so sometimes we “Move the knee” and other times we “Fill the gap”. This can be tested on snow with shims before any permanent changes are made.
What you need to do is visit a qualified bootfitter and request a Stance Balance Assessment.
